Ingredients for Pork Leg Ham

– 500g pork leg

– 200g pork skin

– 1 onion

– 3 shallots

– 50g dried shiitake mushrooms (soaked)

– 50g wood ear mushrooms

– Some cooking oil, 1 teaspoon fish sauce, a pinch of seasoning

How to cook Pork Leg Ham with a pressure cooker

Step 1: Prepare and marinate the pork leg

To remove the unpleasant odor, use a knife to remove the hair from the pork leg, then rub with salt and rinse with clean water. Cut the pork leg into appropriate pieces, removing fat and bones.

Step 2: Next, marinate the pork leg with 1/2 teaspoon of salt, 1 teaspoon of seasoning, and 1 teaspoon of fish sauce for 30 minutes to let the meat absorb the flavors.

Step 3: Prepare the pork skin

Soak the pork skin in diluted saltwater for about 15 minutes, then rinse with clean water 2-3 times and cut into bite-sized pieces.

Bring a pot of water to boil, add some salt, then blanch the pork skin for about 2 minutes. Remove and place in a bowl of cold water to keep the skin crispy and prevent discoloration. Drain the pork skin.

You can remove the hair by boiling the pork skin in boiling water for about 3 minutes until the skin tightens, then use tweezers to remove any remaining hair from the pork skin.

Step 4: Stir-fry the meat

Heat some cooking oil in a pan and sauté finely chopped shallots. Then add the marinated pork into the pan and stir until the meat starts to firm up. Turn off the heat.

Step 5: Cook the pork leg

Place the pork leg in the pressure cooker, add 1 liter of water to cover the meat, and cook for 5 minutes. After the cooking time is up, release the pressure from the cooker.

Step 6: Cook the pork skin and onion

Open the pressure cooker, add the pork skin and onion to cook with the meat for another 15 minutes. After cooking, release the pressure as usual and remove the pork skin and onion.

Step 7: Finish

Soak the dried shiitake mushrooms and wood ear mushrooms in water until they soften, then slice them and add to the cooker. Sprinkle some black pepper and stir well. Continue cooking for 5 minutes. Once the cooking time is up, release the pressure from the cooker. When the meat has cooled, transfer it to a bowl and refrigerate for 4 hours to let it set. The pork leg ham is now ready.
