1 stomach

How to boil white, crispy stomach
Step 1: Pre-process the ingredients
Sprinkle some flour on the inside of the stomach, knead until sticky. Then squeeze lime juice or you can use one of the sour liquids like vinegar, pickles, or brine and knead all sides to remove the odor, rinse thoroughly. Boil a pot of water, blanch the stomach for a few seconds, take it out and put it in cold water, turn it upside down, use a knife to scrape and clean it.
Fill the pot with enough water to cover the stomach, add smashed ginger, lemongrass, and a pinch of pepper, and turn on the heat. When the water boils, add the stomach.
After boiling for about 4-5 minutes, take out the stomach and soak it in ice water, with lime. When the stomach cools down, boil a pot of water again and continue to cook the stomach for the second time. Depending on the size of the stomach, thick or thin, the boiling time can range from 20 to 30 minutes. Then, take out the stomach and soak it in ice water, with lime. This process helps make the stomach crispy, and adding lime makes it whiter.
Before eating, slice the stomach thinly and steam or put it in the microwave, the stomach will still be white and crispy. Serve with sliced onions and mint leaves, dip in shrimp sauce or a sauce made of fish sauce, onions, garlic, and chili.
Notes on pre-processing the stomach
When pre-processing, use sour liquids such as lime juice, vinegar, pickles, or brine to remove the odor of the stomach effectively. Then blanch and clean it.
Do not use salt to knead or add salt when boiling, as it will make the stomach shrink and tough.
Depending on the size of the stomach, the boiling time is from 20 to 30 minutes.
Soaking in ice water helps cool the stomach, adding lime or kumquat helps whiten the stomach.
Choose a stomach of moderate size, thick, weighing about 650 – 800 grams, with even white color for tasty stomach. At the same time, when choosing a stomach, choose fresh ones that are still firm, they will be much more fragrant and delicious.
