Preparing the grilled eggplant with fatty onion
When you bring the eggplant home, remove the stem and slice it diagonally or cut it longitudinally. Slicing it diagonally will make it look more attractive, but it will take longer to grill with the sauce. Cutting it longitudinally will result in thicker slices that will take longer to cook, but it will be more convenient when pouring the sauce. You can soak the eggplant in saltwater to remove any bitterness. Then, lift the eggplant out and drain it.
Preparing the marinated sauce: Mix the minced meat with the grilled meat sauce. Heat the pan and stir-fry the meat until it is cooked and absorbs the seasoning. Avoid using high heat, as the meat will become tough and dry. Mix fish sauce, salt, seasoning powder, cooking oil, and finely chopped spring onions in a separate bowl.
Grilling the eggplant with fatty onion
Method 1: Using an air fryer: Line the air fryer with non-stick paper. Place the eggplant and turn on the air fryer at about 180 degrees Celsius. After about 10 minutes, flip the eggplant over and let it cook for about 5 minutes. Then, add the minced meat and sauce mixture on top. Grill for another 10 minutes.
Method 2: Using a non-stick pan: Spread a thin layer of oil on the pan and heat it up. Place the eggplant on the pan for about 10 minutes, then flip it over and add the minced meat and sauce mixture. Cook for about 5 minutes.
Preparing grilled vegetarian eggplant
For those who do not consume meat, making grilled vegetarian eggplant is also delicious. Grilled vegetarian eggplant is fragrant and pairs well with rice. To make grilled vegetarian eggplant, slice the eggplant into slices of about 1cm. Soak the eggplant in saltwater, then lift it out and pat it dry. Place it on a hot pan, flipping it over. Grilled vegetarian eggplant has a light flavor. You can serve it with a dipping sauce or chili sauce, or soy sauce.
