- 200g pomfret
- 1 packet of dry coating mix
- 1 tablespoon chopped garlic
- 1 tablespoon chopped shallots
- 1/2 tablespoon chopped bird’s eye chili
- 1/2 cup tamarind juice
- Seasonings: sugar, fish sauce, ground black pepper

Step 1 Prepare the Ingredients
After purchasing the pomfret, rub it with salt to remove any sliminess, then soak it in vinegar to reduce the fishy smell. Rinse the fish with water and pat it dry with a paper towel.

In a bowl, mix 1/2 packet of the dry coating mix. Add the pomfret to the bowl and toss until the fish is evenly coated with the dry mix.

Heat oil in a pan over medium-high heat. Once the oil is hot, carefully add the coated pomfret and fry until golden brown and crispy. Remove the fish from the oil and drain on a paper towel.

In a small bowl, combine 1 tablespoon of water, 1 tablespoon of fish sauce, 1.5 tablespoons of tamarind juice, and 2 tablespoons of sugar. Stir well to dissolve the sugar.
Heat a pan over medium heat and add 1 tablespoon of oil. Once hot, add 1 tablespoon of chopped garlic, 1 tablespoon of chopped shallots, 1/2 tablespoon of chopped bird’s eye chili, and the prepared tamarind sauce. Cook, stirring continuously, until the sauce thickens.
