First, use a knife to slit the squid lengthwise and remove the skin and innards. In a small bowl, combine the squid with rice wine and mix for about 5 minutes to get rid of any fishy smell. Then, cut the squid into a checkerboard pattern and slice it into bite-sized pieces.
