However, many people hesitate to make nut milk because they are afraid that it will separate, making it unappetizing and unpleasant to drink. Here are 2 ways to make smooth, creamy, and aromatic young corn milk:

Method 1: Steaming the corn before blending

Ingredients

Prepare 2 ears of sweet corn, 220ml of unsweetened fresh milk

125ml of sweetened condensed milk

2 liters of clean water

1/2 teaspoon of salt

Step 1: Boil the corn

Remove the outer husks of the corn and wash it. It is advisable to keep the inner husks of the corn to retain their aromatic fragrance. Then put the corn and the inner husks in a pot to boil. Avoid peeling off all the husks completely to preserve the rich aroma and ensure the sweetness of the corn. Pour 1 liter of water into the pot. Allow the corn to boil for approximately 10 minutes until it is cooked. Once the water starts boiling, remember to reduce the heat to low to prevent it from boiling too vigorously, ensuring that the corn is cooked evenly without becoming too mushy.

Once the corn is cooked, remove it from the heat and let it cool. Then use a knife to cut off the kernels. 

Step 2: Blend the corn milk

Blend the boiled corn until it becomes smooth. Use the water from boiling the corn to blend it, resulting in a sweeter milk. Add fresh milk and condensed milk and blend them together. Strain the mixture to remove any coarse particles.

Now you have a smooth and golden corn milk. However, if you want to consume it immediately, ensure that the blender and other utensils are thoroughly cleaned to avoid contamination. If not, pour the mixture into a pot and reheat it over low heat. Stir it continuously to prevent it from burning at the bottom and in one direction to prevent the corn milk from separating. 

For a richer flavor and to prevent the corn milk from separating, remember to use salt

Method 2: Making corn milk from raw corn

Ingredients:

2 ears of young corn

1 liter of filtered water

1 pack of unsweetened milk

125ml of condensed milk

1/2 teaspoon of salt

Step 1: Prepare the corn

After purchasing the corn, remove all the husks and the silk. Then wash it thoroughly.

Use a knife to cut off the corn kernels. Put the corn in a blender with filtered water and blend until smooth.

Strain the mixture to make it smooth 

Step 2: Cook the corn milk

Pour the corn mixture and milk into a pot, stir well, and cook over medium heat until the milk starts to simmer. Bring the corn milk mixture to a boil over medium heat, stirring constantly for about 5-7 minutes. Maintain a moderate temperature and stir continuously to prevent it from separating. You can use a microwave or an electric stove to boil the milk. Turn off the heat and let the corn milk mixture cool.

If you prefer vegan corn milk without cow’s milk or condensed milk, you can omit them and add coconut meat while blending. Alternatively, you can make pure fresh corn milk by adding a little sugar or no sweetener at all.
