2 How to Make Bamboo Charcoal Mooncake
Step 1 Prepare the Bamboo Charcoal Dough
First, mix 230gr of all-purpose flour, 1/4 teaspoon of baking soda, and 10gr of bamboo charcoal powder in a bowl. In a separate bowl, combine 160gr of sugar syrup and 30ml of cooking oil and stir until the mixture thickens.
Next, sift the charcoal powder mixture into the sugar syrup bowl and add 30gr of butter, blending until the dough is well combined. After mixing, let the dough rest for about 30 minutes.
Preparing the Bamboo Charcoal Dough
Note: You can use an electric mixer to blend the dough for a smoother consistency. If you don’t have a mixer, a simple whisk will do the trick.
Step 2 Cook the Mooncake Filling
Soak 200gr of mung beans in water for about 2 hours, then drain and cook them until soft. Transfer the cooked beans to a blender along with 80gr of sugar and 20ml of black coffee, and blend until smooth. Pass the mixture through a sieve into a pan.
Add 50ml of cooking oil to the pan and mix well over medium heat. Then, add 15gr of maltose, 10gr of roasted rice flour, and continue stirring until the filling turns brown.

Step 3 Shape the Mooncakes
Take a portion of the sweet bean paste and shape it into a ball. Make an indentation in the center and fill it with 30gr of cream cheese, carefully enclosing the filling.
For the dough, divide it into portions slightly larger than the filling. Use flour to dust your work surface and roll out the dough, then place the filled sweet bean paste ball in the center and wrap it completely with the dough.
Finally, use a mooncake mold to press and shape the mooncakes.

Step 4 Baking the Mooncakes
Bake the shaped mooncakes in an oven preheated to 200 degrees Celsius for 5-7 minutes. Remove the mooncakes from the oven and, while they are still warm, brush them with a thin layer of egg white. Return the mooncakes to the oven and bake for another 10-12 minutes at 180 degrees Celsius.
