– 600g of fresh fish
– 1/2 pineapple
– 1 coconut
– 2 chili peppers
– 4 shallots

How to Cook the Fish Stew
Step 1: Prepare the ingredients
First, clean the fish, removing all the internal organs. Rinse it with diluted salt water to get rid of the fishy smell, and then rinse it again with clean water. Cut the fish into chunks, approximately 2 finger widths each.
For the pineapple, peel and remove the eyes, then cut it into slices. Peel and mince the shallots and garlic. Pluck and trim the scallions, lightly crush the white parts, and cut them into 2-inch lengths. Chop the coconut to extract its milk.
Step 2: Marinate the fish
In a bowl, combine the fish with 5 tablespoons of fish sauce, 2 teaspoons of MSG, 2 teaspoons of ground pepper, 1 teaspoon of seasoning powder, and some of the minced garlic and shallots. Mix well and let it marinate for 20 minutes.
Step 3: Make the fish sauce
Heat 2 tablespoons of cooking oil in a pot. Add the crushed garlic, shallots, and scallions, and sauté until fragrant. Then, add the pineapple slices and fry until both sides turn golden. Pour in 1 cup of coconut milk, 1 teaspoon of coloring agent, and 2 teaspoons of sugar. Also, add the remaining fish marinade. Bring this mixture to a boil over medium heat, and then turn off the heat.
Step 4: Fry the marinated fish
In a separate pan, heat about 4 tablespoons of cooking oil. Fry the marinated fish until both sides turn golden brown over medium heat.
Step 5: Simmer the fish
Transfer the fried fish to the pot with the sauce. Add the chili peppers and simmer over low heat for 30 minutes. If the sauce reduces too much, add more coconut milk or water to just cover the fish. Continue simmering until the sauce reduces again, seasoning with fish sauce, sugar, or seasoning powder to taste. Finally, add the scallion pieces and turn off the heat.
Step 6: Serve
Your delicious and fragrant fish stew is now ready to be served! The fish should be tender and infused with a harmonious blend of sweet and savory flavors. Enjoy it with hot rice and fresh vegetables on the side.
