Steps to make winter melon candy
Step 1: Peel and remove the seeds of the winter melon
Choose ripe winter melons for a more flavorful candy. Peel and remove the seeds, only using the solid part of the melon. Wash it thoroughly and cut it into 6-7cm long strips.

Step 3: Soak the winter melon in lime water for a day
(ratio: 200g lime to 10 liters of water), keep the melon submerged in the lime water to remove bitterness and prevent it from becoming mushy when cooked. After a day, take out the melon and rinse it thoroughly with water.

Step 4: Blanch the winter melon and sun-dry it
Boil a pot of water, squeeze half a lime into it, and blanch the winter melon for about 5 minutes. Then rinse it with one or two changes of water. If you have sunlight, sun-dry the melon. If not, microwave it for about 20 minutes. After this step, the melon will become much whiter.
Step 5: Boil the winter melon with another pot of water
After sun-drying for 30 minutes or microwaving for 20 minutes, boil the melon in another pot of water with half a lime squeezed in it, just like in the previous step. Then skim off any impurities, rinse it thoroughly, and sun-dry or microwave it again. By this time, the melon should be completely white. If you want it even whiter, repeat this step once more.
Step 6: Soak the winter melon in sugar for 1 day and 1 night
Then, soak the melon in sugar with a ratio of 1kg melon to 800g sugar. This is the proportion that will give your candy the best flavor and appearance. Soak the melon in sugar for 1 day and 1 night, stirring occasionally to ensure the sugar is evenly absorbed. When the melon turns white, it’s ready.

Step 7: Cook the candy
After 1 day and 1 night of soaking, cook the candy over low heat. When the water is almost evaporated, stir the candy quickly and evenly. At this point, you can add some pomelo or vanilla essence for a more fragrant candy. Reduce the heat when the candy starts to thicken.
Cook the candy until the sugar crystallizes again.
Continue cooking the candy on the lowest heat, stirring for another 15 minutes until it is completely dry. Then, use gloves to touch the candy, cool it down on the pan, and let it dry in front of a fan for a few hours before storing it in an airtight container.
