– Only eat when the onions are sour, yellow, and have a good smell: Do not eat spoiled or moldy onions as they contain high levels of nitrosamines, which can cause cancer.

– Before eating, rinse the onions several times to reduce the saltiness and acidity. Excess salted onions should not be put back into the jar as it can spoil the onions in the jar. Use clean utensils to pick up the onions, cover the jar tightly, and store it in the refrigerator’s cool compartment.

– It is recommended to pickle onions by yourself: Pickling your own onions allows you to control the amount of salt added and ensures that the food is clean, without additives or preservatives. Use clean pickling equipment (glass jar, porcelain jar, ceramic jar, specialized stainless steel jar) to ensure food safety. When the onions are sour, they should be stored in the refrigerator to retain their flavor.
