Although the pre-shucked oyster meat looks clean, it often contains broken shells and other impurities. Therefore, it is important to rinse the oyster meat before eating to avoid stomach issues.

Most people use flour to clean the oyster meat, but chefs suggest that using flour alone is only half effective. You need to know a small trick to add another ingredient to help clean the dirt in the crevices of the oyster meat.

Here’s how to do it:

First, when buying oyster meat, choose fresh, plump, and firm oysters that are free from sand and broken shells on the surface. The oyster meat should be white, opaque, smooth, and plump. If the oyster meat is thin, shrunken, brownish-red, or black, regardless of whether it has a smell or not, it is of poor quality or already dead, which can cause digestive issues.

After buying the oyster meat, rinse it with water and put it in a large bowl, add an appropriate amount of flour. If you have cornstarch at home, you can use it instead of flour. Mix the flour and oyster meat gently to avoid breaking the oyster meat. The sticky flour helps absorb the slime and dirt on the surface of the oyster meat.

Although the oyster meat has been rinsed with flour, the impurities inside the wrinkles next to the meat are still not completely removed. Therefore, you need to use rice to clean them. Rice is a cooked product made from rice, rich in carbohydrates and starch. When heated, carbohydrates create stickiness, making rice effective in removing dirt. Gently rub the oyster meat with rice, the dirt will stick to the grains of rice, helping to clean the dirt that clings to the wrinkles of the oyster meat.

After rubbing all the oysters, rinse them gently under the faucet to clean them. Observe the bowl of oysters after rubbing with rice, you will see that the water is very dark and contains a lot of sediment, indicating that rinsing with flour alone cannot completely clean the oysters.

So remember, when rinsing oysters, in addition to using flour, you need to use rice to clean them!
