Preparation:

– 1 bunch of egg noodles (or rice noodles, instant noodles…)

– 1 sausage, 1 green chili for stir-frying, 1 carrot, 1 small bowl of bean sprouts, moderate amount of oil, 1 onion, 2 cloves of garlic, 2 tablespoons of soy sauce

Instructions:

Step 1: Prepare the ingredients

Remove the seeds, shred. Shred the carrot. Slice the sausage. Rinse the bean sprouts. Slice the garlic. Chop the onion.

Step 2: Boil the noodles

Boil a pot of water, then put the noodles in and cook according to the instructions on the package. When the water boils again, add a little cold water to the pot until the core of the noodles turns slightly white. Do not overcook the noodles, or they will become mushy when stir-fried.

After boiling, remove the noodles and immediately put them in a bowl of cold water to cool them down. Putting the noodles in a bowl of cold water or rinsing them with cold water will help remove the outer layer of starch that has been gelatinized on the surface of the noodles, making the noodles not stick together when stir-fried.
