Fried noodles is a favorite dish for many people because of its delicious taste. On days when you’re tired of rice, people often replace it with other dishes, including fried noodles. Noodles can be stir-fried with vegetables, meat… any combination is attractive. However, when frying noodles, many women still wonder how to prevent the noodles from sticking together and not sticking to the pan.
Chefs have pointed out that the reason noodles stick together and stick to the pan when frying is because the cook forgets to perform two steps before putting the noodles in the pan. Here is the specific method, ladies, please refer to it:
Preparation:
– 1 bunch of egg noodles (or rice noodles, instant noodles…)
– 1 sausage, 1 green chili for stir-frying, 1 carrot, 1 small bowl of bean sprouts, moderate amount of oil, 1 onion, 2 cloves of garlic, 2 tablespoons of soy sauce
Instructions:
Step 1: Prepare the ingredients
Remove the seeds, shred. Shred the carrot. Slice the sausage. Rinse the bean sprouts. Slice the garlic. Chop the onion.
Step 2: Boil the noodles
Boil a pot of water, then put the noodles in and cook according to the instructions on the package. When the water boils again, add a little cold water to the pot until the core of the noodles turns slightly white. Do not overcook the noodles, or they will become mushy when stir-fried.
After boiling, remove the noodles and immediately put them in a bowl of cold water to cool them down. Putting the noodles in a bowl of cold water or rinsing them with cold water will help remove the outer layer of starch that has been gelatinized on the surface of the noodles, making the noodles not stick together when stir-fried.
Take the noodles out, drain them, put them in a large bowl, add half a tablespoon of cooking oil and mix well so that the noodles do not stick together. They will also not stick to the pan.
Step 3: Stir-fry the noodles
Add oil to the pan, heat the oil, add the sausage and stir-fry for a while then remove it to a plate.
Still in the same pan, add the chopped onion and garlic, stir-fry until fragrant, then add the bean sprouts, chili, and carrot, stir-fry for 1-2 minutes.
At this point, add the noodles and the sausage back to the pan, stir-fry over high heat. Add soy sauce and stir evenly over high heat, then turn off the heat, remove it to a plate, and enjoy it.
