Instructions:
Step 1: Prepare a piece of fresh fish, separate the meat and bones, chop the fish bones into small pieces for later use, then cut the fish fillets, wash and squeeze out the water and marinate with spices.
Add a little salt, a little cooking rice wine, a little pepper to the fish fillets, mix well so that the fillets absorb the spices, then add a tablespoon of starch, a little peanuts oil, and finally the beaten egg white, mix well, marinate for about 10 minutes for later use.
Step 2: Cut half of the spring onion into small pieces, the other half into sections. Cut the chili peppers into small pieces, slice the ginger. Peel and wash the purple onion.
Step 3: Heat up some oil in a pot, add the prepared fish bones to fry, fry the bones until golden on both sides, then add a little ginger and spring onion to fry together until fragrant. After the aroma spreads, add an appropriate amount of hot water and cook for about 3 minutes over high heat.
Step 4: After the time is up, reduce the heat, remove the fish bones from the pot. Then add the marinated fish fillets to the pot, cook over medium-low heat for about 1 minute. Do not cook the fillets for too long, otherwise they will become dry. When the time is up, remove the fillets.
Step 5: Place the fish fillet on top of the fish bones, then sprinkle some chopped spring onion and red chili peppers on top.
Step 6: Pour some peanut oil into a pot, add purple onion, ginger, and spring onion sections, reduce the heat and cook for a while to release the fragrance, then turn off the heat and strain the broth.
Step 7: Drizzle the onion oil on top of the fish fillet, and finally sprinkle some xì dầu, the dish is now ready.
