Pork Ribs in Sweet and Sour Sauce

Ingredients for Sweet and Sour Pork Ribs

500g pork ribs

1 egg

2 tablespoons cornstarch

3 cloves garlic, minced

1/2 onion, cut into wedges

1/2 each green and red bell pepper, cut into bite-sized pieces

100g pineapple, chopped

Marinade: 1 teaspoon each of salt, pepper, fish sauce, and oyster sauce

Sweet and sour sauce:

3 tablespoons fish sauce

3 tablespoons sugar

2 tablespoons vinegar

2 tablespoons ketchup

1 tablespoon water

Oil for frying

Instructions

Step 1: Prepare the ribs

Rinse the ribs and cut them into bite-sized pieces. Pat dry.

Marinate the ribs with salt, pepper, fish sauce, and oyster sauce for 20 minutes.

Step 2: Coat the ribs

Beat the egg in a bowl. Place the cornstarch in a separate bowl.

Dip each rib into the egg, then coat with cornstarch. This coating helps keep the ribs tender and juicy while absorbing the flavors.

Step 3: Fry the ribs

Heat oil in a pan to fry the ribs. The oil should be enough to submerge half of each rib. Fry until golden brown on both sides (about 5-7 minutes). Drain on a paper towel.

Step 4: Make the sweet and sour sauce

In a small bowl, combine fish sauce, sugar, vinegar, ketchup, and water. Stir until the sugar is completely dissolved.

Step 5: Stir-fry the ribs with vegetables

Heat 2 tablespoons of oil in a wok or large pan. Add garlic and sauté until fragrant. Toss in the onion, bell peppers, and pineapple. Stir-fry quickly over high heat for about 2 minutes to retain the crunch.

Add the fried ribs to the wok and pour in the sweet and sour sauce. Toss to coat the ribs evenly. Continue cooking for 3-5 minutes until the sauce thickens and clings to the ribs.

Step 6: Serve and enjoy

Sprinkle some ground pepper if desired. Plate the sweet and sour pork ribs and serve hot with steamed rice.

Tips for Tender and Flavorful Ribs

Coating the ribs with egg and cornstarch ensures they remain tender and moist after frying.

Adjust the sauce proportions to suit your taste: add more vinegar for a tangier kick or extra sugar for a sweeter profile.

Opt for pork ribs with some cartilage for a more delicious and appealing dish.
