Tip for frying tasty, crispy tofu without sticking to the pan

Step 1: For crispy tofu, use a thin slice of lemon to gently rub the pan’s surface, creating a non-stick coating. Additionally, for the best results, rinse the tofu blocks after purchasing, cut them into bite-sized pieces, and let them air dry.

Step 2: If you have a non-stick pan, simply place it on the stove, add oil, and heat it up. Use chopsticks to hold the tofu pieces slightly above the oil for 2-3 seconds. Then, let the tofu’s surface sear before releasing it into the oil for frying. Ensure the oil covers about 1/3 of the tofu’s thickness.

Step 3: Use chopsticks to gently push and coat the tofu pieces evenly with oil before placing them in the pan. Fry until golden, then flip. Remember to maintain a moderate flame and avoid overcrowding the pan with tofu pieces.

Step 4: When the tofu pieces turn a bright or dark yellow, carefully flip them over and continue frying. If the pan sticks, turn off the heat and tilt the pan to one side. As the pan cools, the tofu will naturally detach and cook evenly on both sides. Enjoy your crispy tofu while it’s still hot!

Frequently asked questions

The secret to achieving that perfect crispiness lies in using a simple ingredient – cornstarch. By coating the tofu in cornstarch before frying, you create a barrier that seals in moisture and ensures a crisp, golden exterior.

If your tofu isn’t crisping up as expected, it’s likely due to excess moisture. Make sure to press your tofu before cutting it into cubes and coating it with cornstarch. This step is crucial in removing excess liquid, ensuring your tofu develops that desirable crispy texture when fried.

While cornstarch is the star ingredient for this crispy tofu recipe, you can achieve similar results with alternative starches. Try using arrowroot powder or rice flour as a substitute for cornstarch. These options provide a similar effect, helping to create a crispy barrier around the tofu.

When it comes to choosing the right oil for frying tofu, opt for oils with a high smoke point. Avocado oil, peanut oil, and refined coconut oil are excellent choices as they can withstand high temperatures without burning, ensuring your tofu fries evenly and becomes beautifully crisp.

Frying tofu at the right temperature is crucial for achieving the best crispness. Aim for a temperature between 350°F and 375°F. This range ensures that the tofu cooks through without burning the exterior. Use a candy thermometer to monitor the oil’s temperature for the best results.
