Sweet corn is a familiar and favorite ingredient, often purchased and prepared for various dishes. Sweet corn is rich in nutrients, offering numerous health benefits such as supporting the nervous system, slowing down the oxidation process, preventing anemia, and reducing joint pain.
In addition to familiar dishes like boiled sweet corn, corn stir-fried with butter, corn grilled with green onion butter, corn milk, corn ice cream, and corn stir-fried with salted eggs, you can also use sweet corn to make this delicious and nutritious fried corn dish.
1. Ingredients for the fried corn dish
– Sweet corn: 1 can or 2 ears
– Egg white: 1 egg
– Turmeric powder: ½ spoon
– Crispy flour: 6 spoons
– Lion flour: 3 spoons
– Tapioca flour: 3 spoons
– Seasonings: 1 spoon of sugar, a pinch of salt
2. How to make fried corn
Step 1: Prepare the ingredients
– If using sweet corn, use a knife or your hands to separate the kernels and set aside in a clean bowl. Next, boil the corn with a little salt, turmeric powder, and sugar for about 3 minutes, then pour into a colander and rinse under cold water. Drain the corn thoroughly.
– If using canned sweet corn, simply open the can and pour the corn into a bowl.
– After preparing the corn, add the egg white to the corn and mix well to coat the kernels.
Step 2: Prepare the flour
– After the corn is coated with a thin layer of egg white, sprinkle on the flour.
– While sprinkling, gently shake the basket containing the corn so that the flour evenly coats each kernel without causing the corn to stick together.
Step 3: Fry the corn
– Place the pan on the stove, add cooking oil, and heat over medium heat. When the oil is hot, add the corn and fry. When you add the corn to the pan, wait about 10 seconds before using chopsticks to stir the corn and cook it evenly.
– When the corn gradually starts to float, remove it with a wire skimmer to drain and slowly enjoy.
The fried corn dish will have an enticing aroma and an eye-catching golden color. When you eat it, you will experience each kernel of corn as soft inside, crispy outside, and deliciously sweet. You can enjoy fried corn as an appetizer, a snack, or as a side dish with white rice.
3. Notes on making fried corn
When selecting sweet corn, you can rely on the appearance of the corn. Choose ears of corn with fresh green husks that are not dry or pale yellow. Additionally, the corn silk should be brown, soft, and fresh. It’s also a good idea to choose ears of corn that are medium in length and slender. Avoid corn that is too large in size as it tends to be old, tough, and less sweet.
If you prefer your corn kernels to have a thicker coating, after the first frying, you can wait for the corn to cool, coat it in flour again, and fry it again.
To test whether the oil is hot enough, dip the tip of a chopstick into the hot oil. If you see bubbles forming at the tip, the oil is ready to use.
– For those with digestive or immune system problems, it’s best to avoid eating large amounts of corn frequently.
