This delicious dish, known as “Ca me vinh kho nuoc dua” in Vietnamese, is a popular dish in the Mekong Delta region of Vietnam. It’s a flavorful dish of fish cooked in a coconut sauce, and we’re here to show you how to make it!

1Ingredients for Ca Me Vinh Cooked in Coconut Sauce

  • 2kg of me vinh fish (also known as me dinh fish)
  • 2 young coconuts
  • 2 cloves of garlic
  • A few fresh chili peppers
  • Seasonings: salt, monosodium glutamate, sugar, fish sauce, and food coloring

Tip: When choosing me vinh fish, look for clear, bright, slightly protruding eyes, avoiding those with cloudy or sunken eyes. Fresh gills should be red, free of slime and odor. The scales should be firmly attached, shiny, and naturally colored.

2How to Cook Ca Me Vinh in Coconut Sauce

Step 1 Prepare the Ingredients

Clean and gut the me vinh fish, removing the scales and gills. Rinse the fish thoroughly and set it aside to drain. Open the young coconuts and extract the coconut water.

Step 2 Marinate the Fish

In a pot, mix together 1/2 tablespoon of salt, the cleaned me vinh fish, 1.5 teaspoons of monosodium glutamate, 1 teaspoon of sugar, and 1 teaspoon of food coloring. Make sure the fish is well-coated with the marinade.

Step 3 Braise the Fish

Remove the fish from the pot and set it aside. Place the pot on the stove, add 2 tablespoons of fish sauce and the crushed garlic cloves. Bring to a boil, then return the fish to the pot and simmer.

Next, add the coconut water and continue to braise over low heat until the sauce thickens and reduces, creating a flavorful broth.

Step 4 Final Product

When the sauce has thickened and the fish is tender, add ground pepper and chili peppers to taste. Your delicious braised fish in coconut sauce is now ready to be served!
