When you have leftover rice, you can spread it in a basket, tray, or dish to let it dry. The drier the rice, the better. Alternatively, you can put it in the refrigerator to let it dry slowly before frying or baking.

Ingredients for making crispy cheese rice:

Dry rice: as much as you want

Vegetable oil

Grated cheese

Food coloring, if you want different colors

Instructions:

Break the dry rice into individual grains to avoid clumps when frying and to ensure it puffs up evenly.

Prepare a tray lined with absorbent paper, a deep frying pan, and a slotted spoon for scooping out the rice.

Heat the oil in the pan. Using a lot of oil will make the rice puff up quickly and prevent it from burning.

When the oil is hot, add the dry rice and reduce the heat to make sure it puffs up without burning. Quickly scoop out the rice and place it on the tray lined with absorbent paper.

If you want the rice to have different colors, you can mix food coloring syrup or concentrated food coloring oil with the rice before frying.

Note: Do not add too much rice at once, as it can cause uneven puffing and may result in burnt grains.

After frying, you can sprinkle grated cheese on the rice and toss it to coat evenly. If you prefer a stronger flavor, you can add some salt.

How to make delicious seasoning salt: You can use powdered seasoning salt, but it won’t be as tasty as homemade seasoning salt made as follows:

Roast powdered seasoning salt and whole salt in a 1:1 ratio. Once roasted and dried, grind them into a fine powder using a mortar and pestle or a dry grinder.

Then, mix this salt with grated cheese and toss it with the rice to create a snack that is crispy, flavorful, and colorful.

You can store the rice in an airtight container to keep it crispy for up to a month. You can also pack it in small bags for convenient snacking on the go.
