Choose the best chicken

The chicken used for ritual offerings is often a rooster. You should choose a chicken weighing about 1.5-2kg. Too big of a chicken will easily crack the skin when boiled. When buying a rooster, you need to observe the chicken’s crest. The redder the crest, the better the chicken. Holding the chicken in your hand, you should feel its weight and firmness. The chicken’s feathers should be shiny, close to the body. The legs should be small, with even yellow skin and short spurs. A chicken with long spurs is an older chicken.

A good chicken has a yellow mark under the chest and wings. The flesh of the chicken should be soft, not tough.

Boiling the chicken

Pluck the chicken’s feathers, then rub it with salt both inside and outside to remove dirt and odor. Rinse the chicken thoroughly with clean water.

To prevent the skin from sagging, you can separate the chicken’s feet.

To make the chicken’s skin yellow and beautiful, you can rub turmeric water all over the chicken, leave it for about 5 minutes, then boil it. You can also add turmeric powder to the boiling water to make the skin more beautiful. Additionally, you can wait for the chicken to boil first before smearing chicken fat mixed with turmeric water on the skin.

Choose a pot large enough to hold the chicken comfortably. The water level in the pot should cover the chicken so that it cooks evenly and the skin does not darken. For ritual chickens, you can use toothpicks and string to shape the chicken before boiling.

Place the chicken belly side down at the bottom of the pot. It is recommended to use cold water to boil the chicken to minimize redness of the bones. Add a little crushed ginger to make the chicken more aromatic.

Boil the chicken on high heat until the water boils, then reduce the heat and let it simmer for 10 minutes before turning off the stove. Do not remove the chicken immediately, cover the pot tightly and let the chicken rest in hot water for 10-15 minutes to ensure even cooking.

Prepare a bowl of boiling water to cool, add some ice cubes.

Remove the chicken and soak it in the cold water bowl. This method helps the chicken’s skin and meat contract, making it firmer. When the chicken cools down, remove it and let it drain. If you haven’t used turmeric water before boiling, you can use turmeric fat (chicken fat mixed with turmeric water) to evenly coat the chicken’s skin. Turmeric fat will give the chicken’s skin a shiny, plump appearance, without darkening.

Arrange the ritual chicken on a plate, and attach a red rose to the chicken’s beak.
