Tip: When selecting cape gooseberries, look for ones with a bright red color and avoid dull or dark-colored berries. Choose berries with fresh, green stems, and avoid those with wilted or damaged stems.
2 How to Make Cape Gooseberry Tea
Step 1 Prepare the Ingredients
Remove the green stems from the cape gooseberries using a toothpick. Soak the berries in a diluted salt water solution, then rinse and set aside. Use a toothpick to prick holes all over the surface of the berries to help them absorb the sugar better.
Peel and chop the pineapple into small, bite-sized pieces.

Step 2 Juice the Cape Gooseberries and Pineapple
Use a juicer to extract approximately 250ml of juice from the cape gooseberries and pineapple.

Step 3 Mix Cape Gooseberries, Pineapple, and Sugar
In a bowl, combine 500g of cape gooseberries, half a pineapple, and 250g of white sugar. Mix well to ensure the fruit is evenly coated with sugar.
Add the cape gooseberry and pineapple juice, 50ml of red artichoke or dragon fruit syrup, and 1/2 teaspoon of salt. Mix well and let the mixture sit for about 3 hours until the sugar dissolves.

Step 5 Brew the Tea
In a teapot or pitcher, combine 50g of green tea or jasmine tea with 1.5 liters of water at 75°C. Let it steep for 7 minutes, then strain the tea to remove the tea leaves. While the tea is still hot, add 0.5-1kg of ice cubes and stir well.

In a cocktail shaker or blender, combine 5 cape gooseberries, 50ml of cape gooseberry juice, 120ml of tea, 20ml of sugar syrup, and 20ml of passion fruit juice. Shake or blend well, then pour the mixture into a glass and enjoy!
