Flexible Agar Powder, also known as carrageenan powder, jelly agar powder, coconut agar powder, is made from carrageenan (Kappaphycus alvarezii syn. K. cottonii) – a red seaweed species.

Flexible agar powder is industrially produced by freezing seaweed and then using hydraulic pressure to completely remove water. Afterward, the dried seaweed is ground into a fine powder.

Usually, the instructions on the agar powder package are 50g mixed with 2.5ml of filtered water, but if you reduce the amount of water to 1.5ml, the agar will be crispier. How to use Flexible Agar Powder

Adjust the water ratio to increase or decrease the flexibility of the agar. 10g of flexible agar powder can be mixed with 600 – 800ml or 1 liter of water, reduce it if you add other ingredients such as milk, coffee.

When cooking flexible agar, boil the water first, then gradually sprinkle and stir the agar powder until it is completely dissolved.

When boiling, use high heat; when sprinkling and stirring the powder, use low heat. When all the powder is sprinkled, increase the heat slightly and stir to dissolve. Do not use high heat continuously, as it will cause the agar to bubble and overflow.

4. Notes when pouring agar

When pouring multiple layers of agar, wait for the bottom layer to solidify before pouring the second layer. Use your finger to test the agar, if it feels slightly solid on the surface, evenly poke the first layer with a toothpick and pour the second layer. Pour gently and pour into the corners to ensure that the agar spreads evenly, do not pour directly in the middle of the first layer, as it can cause the layers to break and blend together.
