The sticky rice used to make gac sticky rice is usually the yellow-flower sticky rice – a famous characteristic type of sticky rice in the North Delta region, with white, even grains, fragrant and very sticky. When you want to cook sticky rice, the sticky rice will be cleaned, soaked in water for about 6-7 hours, then poured into a large pot to drain.
Gac should choose ripe, soft fruits, but not overly ripe because the color will fade and it won’t be fragrant. When cut in half, you should see the red, meaty seeds of the gac fruit. Gac fruits with yellow pulp are guaranteed to make delicious sticky rice. Use a spoon to scoop out the seeds and flesh of the gac fruit into a large bowl, scraping off some yellow pulp from the gac fruit to naturally enhance the richness of the sticky rice. Then add about 2 tablespoons of white wine, a few pinches of salt to the bowl, and stir well with the gac flesh until smooth. At this point, the gac fruit will turn a vibrant red and release a fragrant scent.
Steps to cook sticky rice:
– Clean and soak the rice in water for about 6-7 hours, then pour it into a large pot to drain.
– Use a spoon to scoop out the seeds and flesh of the gac fruit into a large bowl, scraping off some yellow pulp from the gac fruit to naturally enhance the richness of the sticky rice. Then add about 2 tablespoons of white wine, a few pinches of salt to the bowl, and stir well with the gac flesh until smooth. – Put the rice in a steaming basket and steam for about 25-30 minutes. When the sticky rice is soft and cooked, use chopsticks to mix well, add 1 tablespoon of cooking oil and mix with the sticky rice for another 5 minutes. The cooking oil will make the sticky rice red and shiny.
– Remove the steaming basket from the heat. When the sticky rice has cooled slightly, sprinkle sugar over it and mix well. Transfer the sticky rice to a plate or use a mold to create a beautiful shape. Sprinkle shredded coconut or toasted sesame seeds on top if you want to make the sticky rice more appealing.
– The cooked sticky rice will have a fragrant aroma. After turning off the heat, quickly sprinkle white granulated sugar onto the sticky rice. The amount of sugar added depends on each person’s taste preferences, whether they prefer a lighter or stronger sweetness. Mix well. Let the sticky rice sit for another 5 minutes, then drizzle a little sesame oil onto the sticky rice and gently mix it to make the grains shiny and appealing.

– Gac sticky rice can be modified into coconut milk gac sticky rice by adding coconut milk in the final cooking stage, or you can create a three-layer gac sticky rice by adding mashed mung beans when preparing the additional ingredients.
If you want to use a rice cooker to cook sticky rice, simply pour boiling water into the rice cooker, add the gac-mixed rice to the steaming tray of the rice cooker, and press the “cook” button. During the cooking process, be sure to use chopsticks to stir the sticky rice several times to ensure even cooking. Typically, pressing the “cook” button twice will complete the process of cooking gac sticky rice.
