– Pork belly

– Fresh bamboo shoots

– Scallion, ginger

– Cinnamon, star anise, bay leaves

– Seasonings: salt, sugar, soy sauce

1.2 How to make fresh bamboo shoot stewed with pork belly

Step 1: Prepare the ingredients

– After buying, fresh bamboo shoots will be peeled and soaked in diluted saltwater for about 10 minutes. Then, remove the bamboo shoots, rinse them with water until they are clean, and use a sharp knife to remove the tip and the old part of the shoots.

– Split the bamboo shoots in half and cut them into bite-sized pieces.

– Clean the pork belly and cut it into square pieces.

– Remove the damaged leaves from the scallions, wash them, and cut them into segments.

– Peel the ginger, rinse it with clean water, and cut it into slices.

Step 2: Blanching the bamboo shoots

– Put a pot of water on the stove, add 1 tablespoon of salt and bring it to a boil. Then, blanch the prepared bamboo shoots in the boiling water for about 1 minute, then remove and place them in a bowl of cold water.

Step 3: Stewing fresh bamboo shoots with pork belly

– Put the pot on the stove and add a little cooking oil. When the oil is hot, add sugar and cook until the sugar melts and turns golden brown, then add the pork belly and stir-fry evenly until the meat is cooked.

– Add cinnamon, star anise, bay leaves, and scallions to the pan. Then, season with 1 tablespoon of cooking wine, 4 tablespoons of soy sauce, and stir-fry to let the pork belly absorb the spices.

– When the meat is cooked, add a bowl of boiling water to the pan, let it cool, and continue cooking for about 10 minutes. Wait for the meat to boil, then skim off the foam and the spices such as cinnamon, star anise… that were added. Cover the pan and continue stewing the meat for another 20 minutes.

– Then, add the blanched bamboo shoots to the pan, stir-fry evenly, and simmer over medium heat until the sauce thickens. Sprinkle the scallions on top and turn off the heat.
