1. Ingredients for the sweet and sour dressing:
– Golden sugar: 220 grams
– Good quality fish sauce (preferably with moderate saltiness): 100 ml
– Coarse salt: 9 grams
– Monosodium glutamate (MSG): 2 grams
– Vinegar: 20 ml
– Lime juice: 40 ml
– Minced garlic
– Chili peppers (both spicy and sweet)
– Ripe pineapple

2. Instructions for making the sweet and sour dressing:
Step 1: Prepare the ingredients
– Peel and wash the garlic cloves, then let them dry.
– Peel and dice the ripe pineapple.
– Wash and slice the chili peppers, removing the stems.

Step 2: Make the dressing
– Put the diced pineapple and sliced chili peppers into a blender and blend until smooth.
– Pour this mixture into a small pot, then add 220 grams of golden sugar, 100 ml of fish sauce, 9 grams of salt, 2 grams of MSG, and approximately 20 ml of vinegar.
– Place the pot on low heat and simmer the mixture until the fish sauce boils for about 20 seconds. Then, turn off the heat. While cooking, stir the mixture with a spoon or chopsticks to ensure everything is well dissolved and combined.
– Wait for the mixture to cool slightly, then add minced garlic and lime juice. Stir well. Finally, pour the dressing into a glass bottle, seal it tightly, and store it in the refrigerator for later use.

3. Instructions for making the chicken feet salad
3.1. Ingredients:
– Deboned chicken feet: 150 grams
– Carrots: 50 grams
– Green mango: 50 grams
– Pickled cucumbers
– Banana blossoms: 50 grams
– Roasted peanuts, fried shallots
– Vietnamese coriander, Vietnamese mint, Thai basil
– Dressing: 80 ml

3.2. Instructions:
Step 1: Prepare the ingredients
– Clean the chicken feet, remove the bones, and cut them into bite-sized pieces.
– Roast the peanuts until fragrant, then peel and crush them.
– Remove any wilted or discolored leaves from the herbs, wash them, and chop them finely.
– Peel and shave the carrots, then wash and dice them.
– Soak the pickled cucumbers in brine, then remove the skin and cut them into bite-sized pieces.
– Peel and slice the green mango into thin strips.

Step 2: Mix the chicken feet salad
– Take a large bowl, add the deboned chicken feet, and pour about half of the dressing over them. Toss to coat well. Then, add the carrots, green mango, banana blossoms, Thai basil, Vietnamese coriander, and half of the remaining dressing.
– Gently mix everything together and let it sit for about 15 minutes to allow the flavors to blend. Finally, add the roasted peanuts, fried shallots, and stir again.
