- After cutting the duck, soak it in cold water for 10 minutes to make the meat white.
- Next, place the duck in the boiling water with sorrel leaves or papaya leaves for 5-10 minutes. This will soften the feathers, making them easier to remove.
- Quickly rub the duck skin to remove any remaining feather roots.
Once all the feather roots are removed, discard the greasy glands at the duck’s tail and squeeze the duck. Let it sit for about 30 minutes, then rinse with water, drain, and continue cooking as usual.
Another tip to remove the foul odor is to add lemongrass, ginger, and a clove of garlic to the cooking water when boiling the duck.
