Here is a way to cook pumpkin flowers, just cook them and you will have a very nutritious and delicious pumpkin flower soup.
Ingredients: 6-8 pumpkin flowers, 100g minced meat, 1-2 mature duck eggs, 30g shiitake mushrooms, 5g chopped spring onions, 10ml lard, 2g chicken essence, 2g white pepper, 5g chopped ginger, appropriate amount of salt and water.
Instructions:
Step 1: First, remove the core of the pumpkin flower, then put the pumpkin flower and salt in a bowl of water, stir well, soak the pumpkin flower for 5 minutes, then rinse it twice under running water. It is best not to eat the stigma of the flower, as some people are allergic to pollen.
Step 2: Peel the mature duck eggs and cut them into small pieces for later use. Cut the shiitake mushrooms into small pieces and wash them for later use.
Step 3: Put chopped ginger, minced meat, lard, salt, white pepper, and chicken essence in a bowl of minced meat and mix well, then stir in one direction for 2 minutes. Next, add a suitable amount of cold water to the pot and bring to a boil. Shape the meat into small balls, put them in the pot, boil until cooked, and set aside.
Step 4: Heat the pan, add an appropriate amount of lard, when the temperature is 60% hot, add the mature duck eggs to fry until fragrant, then add the meatballs and shiitake mushrooms to the pot for 1 minute.
Step 5: Finally, add the pumpkin flowers, salt, and white pepper to the pot, continue to cook for half a minute, then sprinkle a little chopped spring onions on top and it can be served.
Notes:
1. Only put pumpkin flowers into the boiling water for about 30 seconds because the pumpkin flowers themselves are very tender, cooking them for too long will make them lose their taste and become mushy.
2. If you don’t like to eat mature duck eggs, you can use tofu, radishes, winter melon, and other dishes that have cooling and heat-clearing effects.
