Black soy milk is made from 5 simple ingredients, no need for added sugar, the flavor is very unique, delicate, smooth, combined with sweet dried fruits, creating an extremely nutritious drink.
The 5 ingredients needed to make black soy milk: black soybeans, black glutinous rice, roasted black sesame seeds, black goji berries, dried black mulberries, divided in proportion of about 2: 2: 1: 1: 1 or depending on your preference, you can add or subtract ingredients. Do not add too much black sesame seeds to avoid being greasy.
The steps to make black soy milk:
Step 1: Soak the ingredients. Rinse the glutinous rice and black soybeans and soak them in clean water until they expand. Doing so makes the beans easier to grind and smoother.
Step 2: Put the soaked black soybeans, glutinous rice, and black sesame seeds into a soy milk maker, press the soy milk mode, and wait for the milk to heat up.
Step 3: Rinse the black goji berries and dried black mulberries to remove impurities and dirt from the fruits. Then, soak them in warm water. These two fruits are very rich in anthocyanins – coloring pigments, so when soaked in water, they will fade into purple or black.
Step 5: Strain the black soy milk through a fine mesh strainer into a bowl. Skim off any foam. Then, pour in the dried black mulberry and black goji berry water and stir well.
Because dried black mulberries have a sweet taste, there is no need to add sugar. That way, the nutritious drink is ready to enjoy.
