Food Poisoning from Overnight Fried Rice
This happened to an elderly couple in Nam Tong City, Jiangsu Province, China. They were both healthy. Recently, they were rushed to the emergency room by their relatives with severe symptoms such as intense abdominal pain, nausea, and severe diarrhea. At the local hospital, the patients received injections and intravenous fluids, but their condition did not improve. Their condition continued to worsen with symptoms such as low blood pressure, high lactic acid levels, and signs of acid poisoning.
The next morning, the two patients were transferred to a larger hospital. The condition of the wife suddenly deteriorated, and she did not survive. Meanwhile, the husband’s lactic acid level also exceeded 10mmol/L, five times higher than normal, and his body was in a state of shock.
The attending physician asked about what the couple had eaten before and found that the cause could be the overnight fried rice they had for dinner the previous night. According to the doctor’s opinion, gastritis and indigestion cannot cause such severe symptoms. The infection levels in these two patients were very high. Therefore, it could be seen that this was a case of infection affecting multiple organs and leading to the patients’ death.
As for the husband’s health, after a night of emergency treatment, his condition improved, his blood pressure increased, and his lactic acid levels in the body decreased. He received additional treatment for 10 more days, and his health stabilized, allowing for discharge.
Doctor’s Warning
Based on the case of the couple, the doctor issued a warning that summer is a time when bacteria develop rapidly, and refrigeration only slows down their growth but does not eliminate them. There are even bacteria that can adapt well to the low temperature environment of the refrigerator. They are ready to invade and cause harm to the body.
Leftover food overnight will be contaminated. People who consume contaminated food can experience conditions such as encephalitis and other symptoms. Therefore, the doctor’s advice to everyone is to cook leftover food taken from the refrigerator thoroughly. The elderly, pregnant women, young children, and those with chronic illnesses should be especially cautious with food left overnight in the refrigerator. After cooking and storing in the refrigerator overnight, the nitrite levels in the food often exceed permissible limits. If this type of food is consumed for a long time, the stomach and intestines will be affected. It can even stimulate the formation of tumors.
