2 Steps to make spicy chili chicken rice
Step 1 Prepare the chili sauce
In a pan, heat 100ml of cooking oil and sauté garlic, onions, and ginger until fragrant. Add the minced red chili peppers. Season with 35g of fish sauce, 30g of sugar, 8g of chicken stock powder. Cook for about 10 minutes to let the chili sauce absorb the flavors, stirring constantly.

Step 2 Steamed chicken
Clean and dry the chicken. Leave some chicken fat aside for later use. Cut the chicken into pieces and marinate with 2 tablespoons of chili sauce for about 30 minutes to let the flavors penetrate the chicken.
Line a steaming basket with parchment paper. Crush 2 stalks of lemongrass and place them on the paper. Add some coriander leaves and lime leaves. Put the chicken on top. Add sliced ginger and onions on top of the chicken. Steam for about 20 minutes.

Once the chicken is cooked, remove it from the steamer and apply a layer of the chili sauce and chicken oil all over the chicken to give it a beautiful color and prevent it from drying out.
Save the remaining chicken broth in the steaming basket, do not discard it.
Step 3 Cook the rice
Rinse 300g of rice and put it in a rice cooker. Add 360ml of water and about 140ml of the steamed chicken broth. Season the rice with 1/3 teaspoon of salt, 1/3 teaspoon of turmeric powder, and a few slices of ginger. Stir well. Cook the rice as usual.

Step 4 Render the chicken fat
In a pan, melt the chicken fat to obtain chicken oil. Then add 1 sliced onion to the pan. Sauté until fragrant and turn off the heat. Scoop 1 tablespoon of chicken oil and mix it into the cooked rice. Stir well and cover the rice for another 5 minutes.

Now your spicy chili chicken rice is ready. Cut the chicken into bite-sized pieces. Serve the rice on a plate, arrange the chicken next to it, and serve with a bowl of chili sauce for dipping.
