Ingredients
- 3 pieces of tofu
- Leek leaves, purple onion, chili
- Seasonings: Fish sauce, sugar, ground pepper, cooking oil
Instructions
- Wash the tofu, cut into square pieces or 1cm long pieces (depending on your preference); Wash the leek leaves, finely chop; Peel and slice the purple onion; finely chop the chili.
- Mix 3 tablespoons of fish sauce, 1 tablespoon of sugar, 1 teaspoon of ground pepper, 3 tablespoons of water, finely chopped leek leaves and chili (depending on spiciness) in a bowl and stir well.
- Heat the oil in a pan over high heat, reduce to medium heat and fry the tofu until golden and crispy (pour enough oil to submerge 1/2 of the tofu to get a crispy skin but still soft inside). Remove the tofu and place it on paper towels to absorb the oil.
- Remove some of the frying oil from the pan, sauté the purple onion until golden and fragrant, then pour the mixture from the bowl into the pan and bring to a boil (taste it again to adjust the flavor), stir well, let it boil for about 10 seconds, then turn off the heat.
