Instead of making colored water from sugar, you can use coconut water. This method makes the colored water with a sweet and refreshing taste, enhancing the flavor and aroma of braised dishes.

Process of making colored water:

Step 1: Firstly, you need to strain the fresh coconut water to remove small particles and fibers from the coconut. After extracting the coconut water from the fruit, proceed to cook immediately, as if left for too long, the coconut water may turn sour and the quality of the colored water will no longer be good.


Step 2: Pour the coconut water into a pot or pan, then bring to a boil. When the amount of coconut water decreases, you can add more coconut water and continue cooking.

Step 3: When the coconut water has evaporated about half and starts to turn the desired color, reduce the heat to low. During the cooking process, you can gently stir with a chopstick to help the coconut-colored water evaporate quickly without burning. Always be present in the kitchen during cooking.


Step 4: At this step, you can repeat the previous step and pour the colored water into a small pot for easy mixing (optional). When the coconut-colored water has a thick consistency and a brownish color similar to cockroach wings, the process is complete. Before pouring it into bottles, you need to let the coconut-colored water cool down.

Because coconut-colored water is made from pure coconut water, the taste will have a slight bitterness, but the color after cooking the dishes will be very attractive with a beautiful reddish-brown and delicious aroma. It is not bitter and does not cause unpleasant odor like colored water made from sugar.


The storage is extremely simple, you just need to seal it tightly and keep it in a cool, dry place, it can be stored for up to 3 years.
