Steamed beer fish

Ingredients:

Black carp fish: 1 fish, about 2kg-2.5kg

Beer: 1 bottle/can

Pickles: 1 cucumber

Carrot: 1

Pineapple/fragrant fruit: 1 (you can use 2 tomatoes as a substitute)

Seasonings: sugar, salt, chili, ginger, lemongrass, etc.

Herbs: coriander, spring onions, etc.

Steps to cook steamed beer fish

Step 1: Prepare the black carp fish

To make a dish of steamed beer fish, you need to buy fresh and good fish. It is best to buy fish in the morning when the fish is still fresh and alive, it will not be fishy when cooking. You should not buy fish that is too big, from 1.5 – 2kg is enough. Too small fish will be crushed, too big fish will take a long time to cook. Next, you need a sharp knife to prepare the fish.

This fish species lives in mud, so it has a quite fishy smell, and it also has a hard scale layer. Therefore, after buying, you should clean the fish scales thoroughly. Next, use a sharp knife to lightly cut a line on the fish body and remove all the intestines and black membrane. Then, rinse it thoroughly with water and leave the whole fish, only cross-cutting for the fish to quickly absorb the seasonings and look more beautiful.

Step 2: Prepare other ingredients

To make a delicious steamed beer fish dish, it requires the combination of various seasonings. First, cut the tomatoes into small pieces. If using pineapple/fragrant fruit, slice it thinly. Cut ginger and lemongrass into small pieces, lightly crash and make them into a stick with a toothpick. Cut chili into thin slices, clean and cut cilantro, spring onion into medium pieces.

Step 3: Marinate the fish

First, put the black carp fish in a bowl or a large pot. Then, add the necessary seasonings such as sugar, salt, chili, ginger, and finely crushed lemongrass according to the reasonable ratio and mix well. You should wear gloves to spread the sauce, then let it sit and marinate the fish for at least 30 minutes. Remember to evenly spread the sauce on all sides and put the seasonings in between the cuts for better absorption.

Step 4: Steam the fish

Prepare a large enough pot to fit the fish, line the bottom with leaves, and thinly sliced ginger. Next, pour the beer evenly into the pot. Absolutely do not pour too much, otherwise, the fish will be soggy. Slowly place the black carp fish, vertically into the pot, add tomatoes or pineapple/fragrant fruit around. For steamed beer fish, you should cook with low heat to ensure the fish is cooked. High heat will make the beer evaporate quickly but the fish will still be raw. In addition, the sweet broth from the fish cannot be secreted.

Depending on the size of the fish pieces, the cooking time of this dish will vary. After 15-20 minutes, you should open the lid and check. Poke the fish gently with chopsticks, if there is no red juice coming out, it means the steamed beer fish is almost done. When the fish is almost cooked, add cilantro, cut spring onion to the pot and cook for about 3 minutes.

Steamed olive oil tilapia

Ingredients:

1 Tilapia fish

100g perilla leaves

A few spring onions

5 spoons of ground pepper

(ground)

6 stalks of lemongrass

6 chili peppers

1 ginger

5 spoons of soy sauce

2 spoons of fish sauce

Steps:

Preparation of tilapia fish

Clean the scales, belly, and mucus of the tilapia fish. Then, make diagonal cuts on the two sides of the fish to help the seasonings penetrate quickly and the fish cooks faster.

Preparation of other ingredients

Wash the perilla leaves and spring onions, cut them into long sections about 1 finger length. Pound and chop the ginger. Wash and cut the chili peppers.

Season the fish

After preparing the tilapia fish, marinate it with a mixture of seasonings: finely chopped ginger, cut perilla leaves, finely chopped chili peppers, and chopped ginger.

Rub the seasonings all over the fish, then add 2 tablespoons of ground pepper, 5 tablespoons of soy sauce, and 2 tablespoons of fish sauce and continue rubbing the seasonings evenly on the fish.

Insert perilla leaves and cut spring onions into the fish’s stomach while rubbing the seasonings.

Do the same with the remaining parts of the fish. Marinate for 15 – 20 minutes.

Steam the fish

After the fish has been marinated, put it in a pot and start steaming. The fish will be cooked and the dish will emit a delicious aroma of soy sauce.

Tips: During steaming, you can add a little soy sauce to make the dish more flavorful.
