Step 1: Preparing the ingredients
When you bring the chicken home, you need to wash it clean. If you use the chicken meat in the breast, wings, you should cut it into bite-sized pieces, not too small or it will become dry. Peel and finely chop the garlic, then mix it well with fish sauce and sugar in a 1:1 ratio.

Step 2: Pre-boil the chicken wings
You can pre-boil the chicken to cook it faster. Usually, when you use whole chicken wings or thighs, you should pre-boil them. But if you have already cut the chicken into bite-sized pieces, there is no need to pre-boil. Just pre-boil it for about 2 minutes. Boil water, then put the chicken into it and take it out immediately, avoiding putting it in cold water, which will make the chicken lose its flavor. Boil it briefly.
Step 3: Fry the chicken
Dry the pan and add cooking oil, then heat it up before putting the chicken in to fry until it turns golden. Once the chicken is evenly golden, remove it from the pan. During the frying process, you can add lemongrass to create a fragrant aroma and remove the lemongrass strands together with the chicken for crispy lemongrass strands (if you don’t like lemongrass flavor, you can skip this step)
Step 4: Pour fish sauce mixture over the chicken wings
Use the same pan used to fry the chicken, remove excess oil. Add garlic and stir-fry until fragrant, then add the fried chicken and lemongrass from the previous step. Pour the prepared fish sauce mixture over the chicken, stir well to infuse the seasoning into the chicken, the sauce thickens. Add lime leaves (if you like the taste of lime leaves). The sauce thickens and you have a delicious fried fish sauce chicken.
Many families like to add a few slices of onion and bell pepper, you can slice them and stir-fry together.
