Salted egg yolk is a familiar daily dish for Vietnamese people with its characteristic sour, sweet, crispy, and delicious taste. Instead of using onion and sugar, which take a lot of time and have a strong smell, this Tet you can make salted egg yolk for Tet.

Here is a guide on how to make salted egg yolk:

Ingredients for making Salted egg yolk

  • 1 kg of Sung fruit
  • 1 piece of ginger
  • 2 chili peppers
  • 2 cloves of garlic
  • 600ml of fermented vinegar
  • 1 lime
  • 190ml of fish sauce
  • 210gr of sugar
  • 3 tablespoons of salt

Prepare the Sung fruit

  • Wash and soak the Sung fruit in diluted saltwater for about 20 minutes, then use a knife to cut it into thin slices. Then soak it in a mixture of salt and lime for about 20 minutes, then scoop it out and rinse it until the seeds are gone.
  • Continue soaking the Sung fruit with 500ml of fermented vinegar and 1 tablespoon of salt for 30 minutes to reduce the bitterness of the fruit.

Prepare other ingredients

  • Peel and slice the ginger, chop one clove of garlic, and thinly slice the other.

Salted egg yolk

  • First, boil a pot and add 190ml of fish sauce, 210gr of sugar, and 100ml of fermented vinegar. Cover and cook until the sugar dissolves, then let it cool.
  • Then use a spoon to transfer the Sung fruit to the pot of cooled vinegar and sugar, then add ginger, chili peppers, and garlic. Mix well to marinate. Finally, pour it into a glass jar.

Finished product

  • When completed, salted egg yolk will have the characteristic aroma of garlic, ginger, and fish sauce.
  • When eating salted egg yolk, you will feel the fullness of crispy, sour, bitter, salty, sweet, and spicy flavors. It is best served with boiled snails, fried nem, and banh chung.
  • To prevent the Sung fruit from being poisoned by plastic during the fermentation process, it is recommended to use glass jars instead of plastic jars.
  • Before salting, remember to sterilize the glass jar by washing it with boiling water and wiping it clean.
  • Also, if you can consume it all at once, there is no need to store the salted egg yolk in a glass jar.
