Step 2: Cooking rice cake
Preparing the meat filling: First, heat the cooking oil, add the onions and stir-fry until fragrant, then add the pork and stir-fry until cooked. Add the shrimp and shiitake mushrooms and stir-fry until firm. Season to taste. Avoid stir-frying for too long, as the meat may become dry. Add some pepper for fragrance.
Peel and wash the remaining dried onions, then thinly slice and fry them until golden with cooking oil to make crispy dried onions.
Cooking the rice cake: After resting, the batter will settle at the bottom and there will be water on top. You should discard the water to remove the sour taste.
Then put the batter in a pot, add some water and stir well. When the batter thickens, reduce the heat. Add some cooking oil to make the batter soft and smooth. Turn off the heat when the batter is cooked. You can add more water if the batter is too thick or stiff.
Prepare the broth: Pour 300ml of water into a pot, add fish sauce and sugar, and bring to a boil. Simmer and skim off the foam to avoid burning the sugar. Season to taste.
Finished product: Scoop the rice cake into a bowl, pour the broth over it, add the meat filling on top, and sprinkle with crispy dried onions. Add coriander and serve with chili powder. You can also add quail eggs if desired.
