1. Ingredients

2 seafloor crabs

2 stalks of lemongrass, 1/2 small ginger

1 teaspoon ground black pepper

2 tablespoons white wine

2. Instructions

Step 1: Soak the seafloor crabs in a bowl of water for 15 minutes. After that, replace the water and add white wine to help the crabs get rid of sand.

Step 2: Use a toothbrush to clean the shells and legs of the crabs.

Step 3: Slice the ginger and crush it. Cut the lemongrass into sections and crush them.

Step 4: Place 1/3 of the ginger and 1/2 of the pepper in the water for steaming the crabs. Then, put the remaining ginger at the bottom of the steaming dish and place the crabs on top. Sprinkle the ground pepper and remaining ginger and lemongrass on the crabs.

Note: The crabs should be placed upside down to ensure even cooking and to retain the delicious crab juice in the shells. Please pay special attention to this step.

Step 5: Steam the crabs over medium heat. When the water boils, continue steaming for 3 to 5 minutes, depending on the size of the crabs.

The ginger, lemongrass, and pepper help make the crab meat fragrant, non-fishy, and sweet. This dish should be served with a dipping sauce made from salt, pepper, and lime juice to enhance the flavors.

Tips for choosing fresh crabs

Tip 1

When holding the crabs, pay attention to this small tip. The crabs that move more and have stronger legs are healthier and fresher. In this case, the crab in the right hand is fresher, while the one in the left hand looks weak and not suitable for choosing.

Tip 2

Furthermore, a good and fresh crab often has shiny and firm shells and legs.

Tip 3

Moreover, crabs with intact shells and legs are fresher. Avoid choosing crabs with missing or detached shells and legs, as they are likely not fresh anymore.
